One of my favorite tomato recipes is a hot tomato & cheese sandwich. I often have this for lunch during the summer. Don will even have it occasionally if he wants a lighter supper. I spread a little mayo on a slice of wheat bread (Don prefers his without). Then cover with sliced tomatoes and top with grated cheddar cheese. Put on a cookie sheet & brown in the oven several inches below the broiler. I also use my toaster oven. I came across this several years ago at a local vegetarian cooperative called Open Harvest.
